What started as a small takeaway has transformed into one of Brighton’s most whimsical and talked-about dining destinations — proof that when great food meets genuine imagination, a neighbourhood takes notice.
How many years have you been in business?
We first opened in Nov 2022 as a small takeaway shop – the support was so incredible we then renovated to include dine in and transformed it into the whimsical pink and green playground you see today. We’ve now grown to offer pre-ordered sushi boxes, at-home catering, and celebrations beneath the cherry blossoms in our Courtyard, sharing a little Sushi Baby magic well beyond our four walls.
What inspired you to start your business?
Sushi Baby was created by proud Bayside local Hatem Saleh (Founder & CEO of Atlantic Group®) and business partner Pasquale Garofalo, who set out to bring fresh, fun sushi vibes to the neighbourhood.
Brighton is Hatem’s own backyard and each day on his walk to his favourite local coffee spot, @superrandomcafe , Hatem would pass the vacant neighbouring space. It felt like the right time to breathe life back into it.
What is the magic that sets your business apart?
At Sushi Baby, the magic lies in marrying playful imagination with precision craft. We deliver beautifully hand-crafted sushi and Japanese-inspired dishes rooted in traditional techniques, but always with a twist of colour, personality, and delight.
That sense of play extends beyond the plate. From the blush-and-green interiors designed by Mim Design to the cherry blossom courtyard and anime projections, every detail of the space is designed to immerse guests in a lively, whimsical world. Step inside and you’re transported – a place where great food, vibrant design, and a spirited atmosphere come together to create something truly unique.
